Mango Sticky Rice
If you enjoy Asian desserts, I highly recommend trying mango sticky rice. It is a traditional dessert in Thailand and surprisingly simple to make. If you enjoy desserts like tapioca, you will probably love mango sticky rice.
Ingredients
- 1 cup glutinous rice
- 1 cup canned coconut milk
- ¼ cup granulated sugar
- pinch of salt
- 1 ripe mango, cut into pieces
For the sauce
- ½ cup canned coconut milk
- 1 tsp rice flour
- pinch of salt
Instructions
- Soak the glutinous rice in cold water for at least 4 hours, or overnight if possible.
- Steam the rice for 20 to 25 minutes. To do this, place the rice in a sieve over a pot of boiling water and cover with a lid so the rice steams above the water.
- In a saucepan, heat the coconut milk with the sugar and salt.
- Add the hot cooked rice and stir until the liquid is absorbed.
- For the sauce, in another saucepan, combine the coconut milk, rice flour, and salt (to get some rice flour, you can click here).
- Heat the sauce until it thickens slightly.
- Serve the sticky rice with mango and drizzle with the sauce.
