Mango Sticky Rice

If you enjoy Asian desserts, I highly recommend trying mango sticky rice. It is a traditional dessert in Thailand and surprisingly simple to make. If you enjoy desserts like tapioca, you will probably love mango sticky rice.

Servings 4

Ingredients
  

  • 1 cup glutinous rice
  • 1 cup canned coconut milk
  • ¼ cup granulated sugar
  • pinch of salt
  • 1 ripe mango, cut into pieces

For the sauce

  • ½ cup canned coconut milk
  • 1 tsp rice flour
  • pinch of salt

Instructions
 

  • Soak the glutinous rice in cold water for at least 4 hours, or overnight if possible.
  • Steam the rice for 20 to 25 minutes. To do this, place the rice in a sieve over a pot of boiling water and cover with a lid so the rice steams above the water.
  • In a saucepan, heat the coconut milk with the sugar and salt.
  • Add the hot cooked rice and stir until the liquid is absorbed.
  • For the sauce, in another saucepan, combine the coconut milk, rice flour, and salt (to get some rice flour, you can click here).
  • Heat the sauce until it thickens slightly.
  • Serve the sticky rice with mango and drizzle with the sauce.
