Tapioca
Tapioca is a recipe that adapts perfectly to the slow cooker. I love the texture of tapioca! You can enjoy tapioca with fresh fruit. To make this recipe, you will need large pearl tapioca. I have a link for you to get some if needed.
Ingredients
- ⅔ cup large pearl tapioca
- 2 cups hot water
- ½ cup granulated sugar
- a pinch of salt
- 1 cup coconut milk
- fruits (optional)
Instructions
- Place the tapioca in a bowl and cover generously with lukewarm water. Let soak for one hour until the pearls have swollen. Drain and set aside.
- In a small saucepan, add the water, sugar, and salt and stir until dissolved.
- Place the sweetened water in the slow cooker with the tapioca and coconut milk.
- Cook on high for 1 1/2 to 2 hours until the pearls are transparent.
- Serve in individual bowls with fruit if desired.
