Vegetable Soup

This soup really won my heart. This vegetable soup is fabulous. I love the flavor and the mix of vegetables. It’s a perfect recipe to use up your vegetables.
Prep Time 15 minutes
Cook Time 40 minutes
Servings 4

Ingredients
  

  • 2 tbsp butter
  • ½ cup carrots, sliced
  • ½ cup turnip, peeled and cubed
  • ¼ cup potatoes, peeled and cubed
  • ½ cup leek, sliced
  • ½ cup celery, sliced
  • ½ cup onion, chopped
  • 1 cup tomatoes, diced
  • 3 cups beef broth
  • ½ cup 35% cream
  • salt and pepper to taste

Instructions
 

  • In a saucepan, melt the butter over medium heat.
  • Add all the vegetables and cook for 5 minutes.
  • Add the beef broth, and season with salt and pepper.
  • Bring to a boil.
  • Then reduce the heat and simmer for 25 minutes.
  • Stir in the cream.
  • Blend the soup until smooth.
  • Serve with croutons or chives.
