Vegetable Soup
This soup really won my heart. This vegetable soup is fabulous. I love the flavor and the mix of vegetables. It’s a perfect recipe to use up your vegetables.

- 2 tbsp butter
- ½ cup carrots, sliced
- ½ cup turnip, peeled and cubed
- ¼ cup potatoes, peeled and cubed
- ½ cup leek, sliced
- ½ cup celery, sliced
- ½ cup onion, chopped
- 1 cup tomatoes, diced
- 3 cups beef broth
- ½ cup 35% cream
- salt and pepper to taste
In a saucepan, melt the butter over medium heat.
Add all the vegetables and cook for 5 minutes.
Add the beef broth, and season with salt and pepper.
Bring to a boil.
Then reduce the heat and simmer for 25 minutes.
Stir in the cream.
Blend the soup until smooth.
Serve with croutons or chives.
