Tarte tatin

A tarte Tatin is an upside-down caramelized apple tart.
For this recipe, choose apples that hold their shape well during cooking, such as Granny Smith or Reine des Reinettes.
The tart should be flipped just before serving so the caramel remains glossy and slightly runny.

  • ¾ cup granulated sugar
  • 11 granny Smith apples, peeled, cored, and quartered

  • cup softened butter
  • 1 egg yolk
  • 1 cup flour
  • a pinch of salt

  • Add the apples to the skillet and cook them for 15 minutes.
  • Roll out the dough into a round disk. Place the dough over the apples in the skillet and tuck the edges of the dough inside the pan.
  • Bake at 430°F (220°C) for about 25 minutes, until the crust is golden.
  • Carefully invert the tart onto a serving plate and serve.
