A tarte Tatin is an upside-down caramelized apple tart.For this recipe, choose apples that hold their shape well during cooking, such as Granny Smith or Reine des Reinettes.The tart should be flipped just before serving so the caramel remains glossy and slightly runny.

⅓cupsoftened butter
1egg yolk
1cupflour
a pinch of salt
Instructions
In a bowl, mix the softened butter with the egg yolk, a pinch of salt, and 30 ml of cold water. Add the flour and mix with a fork. Form the dough into a ball with your hands, wrap it in plastic wrap, and refrigerate for 30 minutes.
Melt the butter in an oven-safe skillet about 25 cm (10 inches) in diameter. Add the sugar and heat until it caramelizes.
Add the apples to the skillet and cook them for 15 minutes.
Roll out the dough into a round disk. Place the dough over the apples in the skillet and tuck the edges of the dough inside the pan.
Bake at 430°F (220°C) for about 25 minutes, until the crust is golden.
Carefully invert the tart onto a serving plate and serve.
