Ingredients

cup
large pearl tapioca
2
cups
hot water
½
cup
granulated sugar
a pinch of salt
1
cup
coconut milk
fruits
(optional)
Instructions
Place the tapioca in a bowl and cover generously with lukewarm water. Let soak for one hour until the pearls have swollen. Drain and set aside.
In a small saucepan, add the water, sugar, and salt and stir until dissolved.
Place the sweetened water in the slow cooker with the tapioca and coconut milk.
Cook on high for 1 1/2 to 2 hours until the pearls are transparent.
Serve in individual bowls with fruit if desired.
