Tandoori Chicken
You know how much I love Indian cuisine, and tandoori chicken is one of the great classics of Indian cooking. Here is how I make my tandoori chicken in the most authentic way I know.

- 1 tbsp greek yogurt
- juice of 1 lime
- 1 garlic clove, minced
- 1 tbsp minced ginger
- 1 tsp garam masala
- ½ tsp ground turmeric
- salt, to taste
- 1 pinch cayenne pepper
- 900 g chicken thighs
In a large bowl, mix together the yogurt, lime juice, garlic, ginger, garam masala, turmeric, salt, and cayenne pepper.
Add the chicken and toss until well coated. Marinate for at least 2 hours.
Preheat the oven to 400°F (200°C).
Bake the chicken for 20 minutes, then flip and cook for another 20 minutes.
Broil for 2 minutes at the end to brown the chicken nicely.
Serve with basmati rice.
