Tandoori Chicken

You know how much I love Indian cuisine, and tandoori chicken is one of the great classics of Indian cooking. Here is how I make my tandoori chicken in the most authentic way I know.

Cook Time 35 minutes
Servings 4

Ingredients
  

  • 1 tbsp greek yogurt
  • juice of 1 lime
  • 1 garlic clove, minced
  • 1 tbsp minced ginger
  • 1 tsp garam masala
  • ½ tsp ground turmeric
  • salt, to taste
  • 1 pinch cayenne pepper
  • 900 g chicken thighs

Instructions
 

  • In a large bowl, mix together the yogurt, lime juice, garlic, ginger, garam masala, turmeric, salt, and cayenne pepper.
  • Add the chicken and toss until well coated. Marinate for at least 2 hours.
  • Preheat the oven to 400°F (200°C).
  • Bake the chicken for 20 minutes, then flip and cook for another 20 minutes.
  • Broil for 2 minutes at the end to brown the chicken nicely.
  • Serve with basmati rice.
