Cauliflower Soup

I’ll show you how I make a simple cauliflower soup recipe — easy and not complicated.

Servings 8

Ingredients
  

  • 2 tbsp butter
  • 1 onion, sliced
  • 3 potatoes, diced
  • ½ cauliflower, cut into florets
  • 6 cups chicken broth
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • 1 bay leaf
  • salt and pepper to taste

Instructions
 

  • Melt the butter and add the onion. Cook until it becomes translucent.
  • Next, add the potatoes and cauliflower. Sauté for 1–2 minutes. Season with salt and pepper.
  • Add the chicken broth and herbs and bring to a boil.
  • Let simmer for 30 minutes.
  • Using a blender, purée the soup until smooth and adjust the seasoning if needed.
  • Serve hot.
