Cauliflower Soup
I’ll show you how I make a simple cauliflower soup recipe — easy and not complicated.
Ingredients
- 2 tbsp butter
- 1 onion, sliced
- 3 potatoes, diced
- ½ cauliflower, cut into florets
- 6 cups chicken broth
- ½ tsp dried basil
- ½ tsp dried thyme
- 1 bay leaf
- salt and pepper to taste
Instructions
- Melt the butter and add the onion. Cook until it becomes translucent.
- Next, add the potatoes and cauliflower. Sauté for 1–2 minutes. Season with salt and pepper.
- Add the chicken broth and herbs and bring to a boil.
- Let simmer for 30 minutes.
- Using a blender, purée the soup until smooth and adjust the seasoning if needed.
- Serve hot.
