Loaded Baked Potato

This recipe was inspired by a trip I took to Martinique. We went to a small restaurant near our hotel where we enjoyed grilled meat. As a side dish, we were served these incredibly delicious baked potatoes, and I recreated my own version of that wonderful recipe. Everything was amazing. We went back to that restaurant two or three times because we loved it so much.

Cook Time 40 minutes
Servings 4

Ingredients
  

  • 4 potatoes
  • ½ cup Philadelphia cream cheese
  • cup 35% whipping cream
  • 1 shallot, finely chopped
  • 1 clove garlic, finely minced
  • 1 tsp chives
  • 1 tsp fresh parsley
  • Salt and pepper, to taste

Instructions
 

  • Pierce the potatoes several times with a fork.
  • Place them in the microwave for 5 minutes. Turn them halfway through cooking and microwave for another 5 minutes (for a total of 10 minutes).
  • Meanwhile, mix the Philadelphia cream cheese with the 35% whipping cream, salt, pepper, shallot, garlic, chives, and parsley until well combined.
  • Transfer the potatoes to the oven or BBQ at 500°F and cook for 40 minutes.
  • Cut the potatoes lengthwise and fill them with the Philadelphia mixture.
  • Serve immediately.
