Caesar Salad
This Caesar salad is crispy, tangy and rich in flavor. Fresh romaine lettuce and golden croutons are coated in a creamy egg-free dressing, perfectly seasoned.Thanks to the parmesan and anchovy paste, the dressing brings a nice touch that gives all the depth and character to this recipe.
Ingredients
For the dressing
- 1 tbsp lemon juice
- 1 clove garlic, minced
- ½ cup mayonnaise
- ¼ cup grated parmesan cheese
- 1 tbsp white vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- ½ tbsp anchovy paste
- ½ tsp salt
- ½ tsp pepper
- ¼ cup olive oil
For the salad
- ¾ cup croutons
- 2 romaine lettuces cut into 2 centimeter slices
- ¼ cup grated parmesan
Instructions
- For the dressing, blend in a mixer the lemon juice, garlic, mayonnaise, parmesan, white vinegar, Worcestershire sauce, Dijon mustard, anchovy paste, salt as well as pepper for about one minute.
- With the mixer still running, add the olive oil in a thin stream, gradually.
- For the salad, in a bowl, combine the croutons, the chopped romaine lettuce as well as the parmesan cheese.
- After that, add the dressing and serve.
