Caesar Salad

This Caesar salad is crispy, tangy and rich in flavor. Fresh romaine lettuce and golden croutons are coated in a creamy egg-free dressing, perfectly seasoned.
Thanks to the parmesan and anchovy paste, the dressing brings a nice touch that gives all the depth and character to this recipe.

Ingredients
  

For the dressing

  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ½ cup mayonnaise
  • ¼ cup grated parmesan cheese
  • 1 tbsp white vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • ½ tbsp anchovy paste
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil

For the salad

  • ¾ cup croutons
  • 2 romaine lettuces cut into 2 centimeter slices
  • ¼ cup grated parmesan

Instructions
 

  • For the dressing, blend in a mixer the lemon juice, garlic, mayonnaise, parmesan, white vinegar, Worcestershire sauce, Dijon mustard, anchovy paste, salt as well as pepper for about one minute.
  • With the mixer still running, add the olive oil in a thin stream, gradually.
  • For the salad, in a bowl, combine the croutons, the chopped romaine lettuce as well as the parmesan cheese.
  • After that, add the dressing and serve.
