Green Pea Rice

Here is my recipe for green pea rice. To add more flavor, I cook the rice in chicken broth and, toward the end of cooking, I add a little butter! It’s my little secret that makes all the difference! It’s perfect as a side dish with skewers or any cut of meat.
Also, I don’t use canned peas. I find them too mushy. Frozen peas are sweeter and I prefer their texture. I highly recommend trying frozen peas for this recipe! Plus, they keep well in the freezer and can be used for many other great recipes.
This recipe yields enough to serve as a side for 6 people.

Cook Time 20 minutes
Servings 6

Ingredients
  

  • 2 cups basmati rice
  • 1 cup frozen peas
  • 5 cups chicken broth
  • 3 tbsp butter
  • 3 tsp parsley
  • ½ onion
  • 1 tsp olive oil

Instructions
 

  • Add a little oil to the bottom of a pot.
  • Cook the onions until they become translucent.
  • Add the basmati rice and stir.
  • Then add the chicken broth, frozen peas, and parsley.
  • Let the liquid evaporate until there is just a bit left in the pot. Then, add the butter.
  • The cooking is done when the liquid is fully absorbed or evaporated.
  • Serve hot with skewers or a nice cut of meat.
