Semifreddo
A semifreddo, as the name suggests, is a “semi-frozen” dessert. It originates from Italy and can be made in a variety of flavors.My recipe is orange-flavored, but it can easily be adapted to other flavors.If you’re looking for a refreshing dessert to cleanse your palate, this is perfect.

- 9 egg yolks
- 1 cup granulated sugar
- ⅓ cup rum (I use alcohol-free rum)
- 1½ cup 35% cream (heavy cream)
- zest of 2 oranges
Caramelized oranges
- 2 oranges, peeled and thinly sliced
- ⅔ cup granulated sugar
- ⅓ cup water
Whip the heavy cream until soft peaks form.
Bring water to a boil.
In a bowl, whisk together the egg yolks, sugar, and rum.
Place the bowl over a saucepan of boiling water (off the heat) and whisk until the mixture thickens. The sugar must be completely dissolved.
Transfer the bowl to another bowl filled with ice and mix until the mixture has cooled.
Then gently fold in the whipped cream and orange zest.
Pour the mixture into a 1.5-liter mold lined with plastic wrap.
Freeze overnight.
In a small saucepan, melt the sugar over low heat. Once melted, slightly increase the heat and tilt the pan in all directions so the caramel forms evenly. Carefully add 1/3 cup of water.
Pour the caramel over the oranges and refrigerate until the mixture has cooled.
Once the semifreddo is fully frozen, slice and serve with the caramelized oranges.
