In a skillet, heat the olive oil over medium heat and cook the bacon until lightly browned.
Transfer the bacon to the slow cooker.
In the same skillet, sear the beef cubes until browned on all sides. Transfer the beef to the slow cooker.
Pour in the beef broth and add the bouquet garni and the whole studded onion to the slow cooker.
In the same skillet, sauté the chopped onion and carrots for about 5 minutes.
Add the tomatoes, tomato paste, and garlic. Stir well, then transfer everything to the slow cooker.
Cook on low for 5 to 7 hours.
After cooking, season with salt and pepper. Remove and discard the bouquet garni and the studded onion.
Stir in the orange zest and juice.
Serve hot.
