Waffles

Looking for the perfect soft waffle recipe? I have an excellent basic waffle recipe for you. The batter is soft, delicate, and sweet. It’s the perfect recipe to feature at a brunch table (P.S.: for a brunch with friends, having this on the table is sure to impress your guests!) or for slow, relaxing mornings!
This isn’t a complicated recipe, but it does require a 30-minute resting time because it uses instant yeast. However, if you want to skip the resting time, you could still get great results—the batter expands significantly in the waffle maker, almost doubling in size.
Of course, you’ll need a waffle maker for this recipe. I recommend getting one that flips 180 degrees—it makes cooking easier and helps ensure the batter spreads evenly, like this one.
A small note: this is not a crispy waffle recipe like the frozen ones you find in the grocery store. This recipe is best suited for those who enjoy soft waffles. I suggest serving them with maple syrup and fresh berries, whipped cream, or any syrup of your choice! I once found an amazing mango syrup on a trip to Martinique, and I think this recipe would go great with something like that. If you eat the waffle plain, without syrup, I’ll be honest—the texture can be a little dry. But once paired with syrup, it’s the perfect soft waffle experience!
This recipe makes about 5 to 6 waffles, depending on the size of your waffle iron. You can even double or triple the recipe and freeze some in advance. My tip: put them in a large ziplock bag and squeeze out as much air as possible before freezing. Then, on busy mornings, just pop one in the toaster to reheat—and you’re all set!

Ingredients
  

  • 3 ¼ cups all-purpose flour
  • 1 ¼ cups granulated sugar
  • 4 egss
  • 1 cup softened butter
  • ¾ cup milk
  • 2 tsp instant yeast
  • 1 tsp baking soda
  • ¼ tsp salt
  • Melted butter for cooking

Instructions
 

  • To help activate the yeast, microwave the milk for 40 seconds.
  • Add the yeast to the milk until a small foam forms.
  • In a bowl, mix the flour, sugar, baking soda, and salt.
  • In another bowl, gradually combine the butter, eggs, and flour, alternating with the milk.
  • Let the waffle batter rest for 30 minutes in a draft-free spot.
  • Brush your waffle iron with melted butter using a silicone brush.
  • Scoop about ¾ cup of waffle batter into the waffle iron, using a knife or spatula to evenly spread it across the bottom plate.
  • Close the waffle maker and flip it 180 degrees.
  • When the green indicator light turns on, flip the waffle iron back and remove the waffle.
  • Repeat for each waffle, remembering to butter the waffle iron each time.
  • Serve hot with syrup and fresh berries.
