Avocado Toast with Runny Egg

Here’s a very simple but truly delicious recipe. I find that this easy dish adds a nice variety to my breakfast rotation. This avocado and egg toast also gives me healthy fats and protein from the egg to keep me going throughout the day.
This recipe makes one serving. If you’re cooking for two, double the quantities; for four, quadruple them.

Ingredients
  

  • 1 avocado
  • 1 lemon
  • 1 egg
  • 1 slice of rustic bread
  • ½ cuillère Salt to taste, pepper to taste

Instructions
 

  • Toast your slice of rustic bread.
  • In a skillet with a bit of butter, cook the egg so that the center remains runny. Add salt and pepper to taste. Flip the egg to continue cooking, but keep the yolk soft and runny.
  • Mash the avocado flesh with a fork and add lemon juice. Season generously with salt.
  • To assemble, spread the mashed avocado on your toast.
  • Then place the egg on top of the avocado spread.
  • Serve with fresh fruit!
