Triple Chocolate Cookies

It’s a quick and easy recipe (prep time is about 15 minutes) that you can adapt to your personal preferences:
If you like a rich chocolate flavor, I recommend:– 2/3 cup milk chocolate– 2/3 cup white chocolate– ¼ cup dark chocolate
Or, if you prefer a balance between sweetness and the bitterness of dark chocolate, I suggest:– 2/3 cup dark chocolate– 2/3 cup white chocolate– ¼ cup milk chocolate
I personally like to add cashews to these cookies. I find the crunch brings something really nice to the texture, but you absolutely don’t need to include them—especially if you don’t have any on hand.
To give my cookies a “magazine look,” I like to press a few pieces of white chocolate on top of each cookie just before baking. It gives a beautiful look once baked.
Speaking of baking, it’s not always easy to know when cookies are done, especially with dark dough (because of the cocoa). Overbake them and they get dry—not great. Underbake them and they don’t hold together. My tip? If the center still looks shiny in the oven, it needs 1–2 more minutes. The baking time is about 10 minutes (based on cookies made with 2 tablespoons of dough), but this can vary slightly from one oven to another.

Ingredients
  

  • 2 cups all-purpose flour
  • ¼ cup cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup butter
  • 1 cup brown sugar
  • 2 tbsp corn syrup
  • 2 eggs
  • 2/3 cup dark or milk chocolate
  • ¼ cup milk or dark chocolate
  • 2/3 cup white chocolate
  • 2/3 cup chopped cashews (optional)

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix the flour, cocoa, baking soda, and salt.
  • Cream the butter with the brown sugar.
  • Add the eggs and corn syrup to the butter mixture.
  • Gradually add the dry ingredients.
  • Mix until the dough is smooth.
  • Fold in the dark, milk, and white chocolate, and the cashews (optional).
  • Line a baking sheet with parchment paper.
  • Scoop out 2 tablespoons of dough and roll into balls.
  • Place each dough ball on the sheet, spacing them apart.
  • Top with a few extra white chocolate pieces, if desired.
  • Bake for about 10 minutes, until the centers are no longer shiny.
