Wonton Soup

Wonton Soup

Wonton soup is a Chinese dumpling soup. Wontons are made by placing a filling inside a wonton wrapper. Then, the wontons are cooked in a flavored chicken broth. I use a mixture of ground beef and shrimp in my recipe because in our home we don’t eat pork. However, traditionally, wontons are made with ground pork and/or shrimp.
There are many ways to fold wontons. Personally, I place a small amount of filling in the center of the square wonton wrapper, fold it in half, and then bring the corners together to seal. I’ve linked a video showing how I fold my wontons.
You can find wonton wrappers at the grocery store in the frozen section near the Asian products.
This recipe makes about thirty wontons.
Wontons freeze very well, and you should freeze them before cooking them in the flavored chicken broth. You can double or triple the batch and make smaller portions in several ziplock bags to freeze. To cook frozen wontons, boil them in the broth for 7 minutes instead of 5.

Ingredients

Wonton

  • 350 g chopped shrimp
  • 100 g ground beef or ground pork
  • 2 green onions, finely chopped
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • ½ tsp salt
  • A pinch of pepper
  • Half a 454 g package of wonton wrappers

Soup

  • 6 cups chicken broth
  • 1 one-inch piece of ginger
  • 2 garlic cloves, sliced lengthwise
  • 2 green onions, finely chopped
  • 1 sliced bok choy (optional)

Instructions

  • Mix together the shrimp, ground beef or pork, green onion, soy sauce, sesame oil, salt, and a pinch of pepper.
  • Place half a tablespoon of filling in the center of a wonton wrapper. Fold the wrapper in half and seal with a bit of water. Bring the corners together and seal again with a bit of water.
  • Repeat until you have used all the filling (and freeze some of the wontons at this point, if desired).
  • Bring the chicken broth to a boil, adding the green onions, garlic cloves, and ginger. Once boiling, let it continue to boil for another 3 minutes to fully infuse the ginger and garlic.
  • Remove the ginger and garlic from the broth using a small strainer or spoon.
  • Next, add the bok choy and cook for another minute.
  • Add the wontons and cook for five minutes.
  • Serve hot.
