Watermelon and Raspberry Mocktail

Perfect for summer, simple and quick to prepare, this drink will refresh you and you’ll be charmed by its flavor. What’s great about this recipe is that you can adapt it if you come across a bland watermelon—just add more maple syrup! This recipe uses club soda, which gives the drink a nice fizzy touch. You can even add a bit of mint to complement it!
I’d also like to share some tips for choosing a good watermelon, since it’s not always easy to find a sweet and flavorful one. If you want the sweetest watermelon, pick one that is rounder and heavier. Look for ones with yellow spots, as that’s a good sign of ripeness and flavor. Avoid longer, more oval melons, which tend to be more watery and less sweet. Also, avoid melons with white spots.
To serve this mocktail, I rub a bit of lemon juice around the rim of the glass so that granulated sugar sticks to it. Then I garnish with a lemon slice and some mint, if I have any!
This recipe yields about 5 to 6 glasses.

Ingredients
  

  • 2 cups watermelon, cubed
  • ¼ cup raspberries
  • Between ¼ and ½ cup maple syrup, epending on how sweet your watermelon is
  • Juice of 1 lemon
  • 1 lemon, sliced
  • 3 ½ cups club soda

Instructions
 

  • Blend the watermelon and raspberries in a blender.
  • Strain the liquid through a fine sieve to remove seeds.
  • Add the maple syrup, lemon juice, lemon slices, and club soda.
  • Fill a 2.5 L pitcher with ice and stir with a long spoon.
  • Serve in a glass with a lemon slice and mint.
