Loaded Baked Potato
This recipe was inspired by a trip I took to Martinique. We went to a small restaurant near our hotel where we enjoyed grilled meat. As a side dish, we were served these incredibly delicious baked potatoes, and I recreated my own version of that wonderful recipe. Everything was amazing. We went back to that restaurant two or three times because we loved it so much.Serve 4.
Ingredients
- 4 potatoes
- ½ cup Philadelphia cream cheese
- ⅓ cup 35% whipping cream
- 1 shallot, finely chopped
- 1 clove garlic, finely minced
- 1 tsp chives
- 1 tsp fresh parsley
- Salt and pepper, to taste
Instructions
- Pierce the potatoes several times with a fork.
- Place them in the microwave for 5 minutes. Turn them halfway through cooking and microwave for another 5 minutes (for a total of 10 minutes).
- Meanwhile, mix the Philadelphia cream cheese with the 35% whipping cream, salt, pepper, shallot, garlic, chives, and parsley until well combined.
- Transfer the potatoes to the oven or BBQ at 500°F and cook for 40 minutes.
- Cut the potatoes lengthwise and fill them with the Philadelphia mixture.
- Serve immediately.
