Beef Daube

I have been making this recipe in the slow cooker for several years. I love the depth of flavor in this dish, and I also appreciate how easy it is to prepare in a slow cooker.
It is a truly comforting meal, and I hope you will give it a try.

Servings 4

Ingredients
  

  • 3 tbsp olive oil
  • 3 slices bacon, chopped
  • 900 g stewing beef, cut into cubes
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 tomatoes, peeled, seeded, and chopped
  • 2 tsp tomato paste
  • 2 cloves garlic, finely minced
  • 1⅔ cup beef broth
  • 1 bouquet garni  such as thyme, sage, and parsley tied together with kitchen string
  • 1 small onion studded with 2 cloves
  • zest and juice of half an orange
  • 1 tbsp fresh parsley
  • salt and pepper, to taste

Instructions
 

  • In a skillet, heat the olive oil over medium heat and cook the bacon until lightly browned.
  • Transfer the bacon to the slow cooker.
  • In the same skillet, sear the beef cubes until browned on all sides. Transfer the beef to the slow cooker.
  • Pour in the beef broth and add the bouquet garni and the whole studded onion to the slow cooker.
  • In the same skillet, sauté the chopped onion and carrots for about 5 minutes.
  • Add the tomatoes, tomato paste, and garlic. Stir well, then transfer everything to the slow cooker.
  • Cook on low for 5 to 7 hours.
  • After cooking, season with salt and pepper. Remove and discard the bouquet garni and the studded onion.
  • Stir in the orange zest and juice.
  • Serve hot.
