BBQ Chicken Skewers

In the summer, we love barbecuing, and this BBQ chicken skewer recipe is a real classic for us because it’s simple and flavorful. My partner is a big fan of this recipe because, for him, meat always needs sauce. There are never any leftovers—he absolutely loves my BBQ chicken skewers!
Also, the BBQ sauce in this recipe is easy to make—no need to chop garlic or onions! It’s simple, and I highly recommend trying it!
I’m sure you already have the ingredients for this recipe in your fridge and pantry. A tip to prevent your skewers from sticking to the barbecue grill during cooking is to use disposable aluminum grilling trays. When you add sauce during cooking, you want it to stay on the skewers and be able to handle the meat easily. If you don’t have disposable trays, you can use aluminum foil, but the skewers may still stick a bit.
This recipe makes 4 large skewers.

Ingredients
  

Skewers

  • 3 or 4 chicken breasts, cut into cubes
  • 1 tbsp olive oil
  • 1 bell pepper, cut into large chunks
  • 1 red onion, quartered
  • 10 to 15 manzanilla olives
  • BBQ Spice Mix (see notes)

BBQ Sauce

  • 2 tbsp butter
  • ½ cup ketchup
  • ¼ cup molasses
  • 2 tbsp apple cider vinegar
  • ½ tbsp whole grain Dijon mustard (or regular Dijon)
  • ¼ cup brown sugar
  • ¼ tsp onion powder
  • ¼ tsp chili powder
  • ¼ tsp paprika
  • ¼ tsp salt

Instructions
 

BBQ Sauce

  • Melt the butter in a small saucepan.
  • Add the ketchup, molasses, Dijon mustard, and apple cider vinegar.
  • Then add the brown sugar and spices.
  • Stir until the mixture becomes smooth and glossy.

Skewers

  • Marinate the chicken cubes in the BBQ spice rub with a little olive oil for at least 30 minutes.
  • Soak 4 wooden skewers in water to prevent them from burning on the barbecue.
  • Skewer the marinated chicken, alternating with vegetables (pepper, red onion, and olives) between the chicken pieces.
  • Add olive oil to a disposable aluminum grill tray (or aluminum foil).
  • Grill the skewers at 450°F directly on the aluminum tray.
  • Cook the skewers for 15 to 20 minutes.
  • Using a silicone brush, generously brush the skewers with BBQ sauce. Flip the skewers and brush the other side. Repeat this step 2 to 3 times.
  • Continue cooking for another 5 minutes and check with a knife to ensure the meat is fully cooked.

Homemade BBQ spice mix:
  • 2 tsp brown sugar
  • 1 1/2 tsp paprika
  • 1 1/2 salt
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/4 tsp pepper
